The "Crappy Pancake"

I was in Bellingham at an all day breakfast place when I ordered Crepes. It stumbled over my tongue and I struggled to say such a simple word. CREPE!. I ended up saying "crappy pancake instead" Since then, Crepes are now called Crappy pancakes.
HOWEVER -- They are the best pancakes in my opinion, at least the way I make them.
I've recently become to love cooking, well more baking. I found this recipe, I might share with you, that is super easy and has NO SUGAR! Shocking right?
It is not like the traditional crepe that you picture, paper thin, falling apart when you try to flip, but you're not supposed to flip? Confusing they are! Here's my secret.
1 c. Flour
1/2 c. Milk (I use skim) - any will work
1/2 c. Water
2 Eggs
Simple right?! Feel free to double the recipe if you want left overs. (I freeze them)
Okay here's the deal
1). Put flour and eggs in a bowl and stir/mix with a spoon (or mixer works too)
- It will be sticky and dough like
2). Mix water and milk together
3). Slowly pour the milk/water into the flour/eggs
- You want to stir with a whisk or mixer
- Be careful not to over mix it if you are using a mixer. You do not want to have meringue.
- Mix until you have little to no lumps
4). Pour mix on oiled/spray medium heated pan about a pancake size, wait until the top looks to no longer be runny then flip.
- It should be golden brown
- First one is usually crap FYI, always happens for me so don't freak out
- Also do not reapply oil or spray it should be good for the whole patch, even if you double it.
